I haven’t posted this in years! This one is indeed a true 1970s dessert. Kraft is having problems with their website so I found one of many who offer it.
I’ve never had recipes on my blog but since it’s almost Christmas I thought I would stick with my usual theme and post this dessert that is associated with the 1970s.

Watergate Salad
DESCRIPTION
A delicious light and fluffy salad or dessert made with pistachio pudding, crushed pineapple, miniature marshmallows, nuts, and cool whip. It can be whipped up in a snap. Perfect for potlucks! A taste of heaven on earth.
INGREDIENTS
- 1 (3.4-ounce) box instant pistachio pudding mix
- 1 (20-ounce) can crushed pineapple with juice
- 1 (8-ounce) container of cool whip thawed
- 1 (heaping) cup of miniature marshmallows
- ½ cup chopped pecans
- Stemmed maraschino cherries for garnish if desired
INSTRUCTIONS
- In a glass serving bowl, mix crushed pineapple and juice with pistachio pudding mix. Stir pudding is completely dissolved and mixture is smooth.
- Next, fold in the thawed cool whip. Gently fold until pudding and cool whip is completely blended.
- Add miniature marshmallows and pecans. Cover and chill until salad is set. About 25 minutes or until ready to serve.
- When ready to serve, garnish with stemmed cherries and extra chopped pecans if desired.
NOTES
Do ahead tip: Watergate Salad can be made up 2 days ahead. Cover with plastic wrap and keep refrigerated until ready to serve.

I had some a few weeks ago…I went to a supermarket where they made it fresh…it was great. It is really good.

Classic white people food! Like lime jello with canned fruit cocktail in it. Now you’ll have to run “Ritz Mock Apple Pie”. I’ve been threatening to make it for decades – broken up Ritz crackers replace apples in the filling. I’m not sure what the appeal of fake foods was. My mom used to make mock chicken legs – made with ground veal and pork on a skewer.

I never heard of the mock food before! Well only vegan hamburgers or something…
This is something we started to make…it’s affordable and I like it better than potato chips… They are called Alabama Fire Crackers.

I’m allergic to nuts, so no go for me but my sweetie has made something similar for years- Cool whip, pine apple, cherry pie filling, maybe a few other things, calls it ‘pink stuff’. Pretty tefreshing

I like fruit salad as well… a can of fruit cocktail and whip cream…mix it together…no not your healthy salad! Hey…it’s one time in a year!

Yeah Christmas is no time for healthy eating! I could probably go veggie for most of the year, but I’d have to give it up for December…

I don’t need it! I’ve started to do 7000 steps a day to get rid of some covid weight…and I’m doing good…but the doctor told me…eat all you want on Christmas…but don’t go back the day after and the day after and the day after…so I’ll follow that…hopefully! lol

My mother-in-law made her own version and called it “green glob.” Since her death, my wife makes it every Thanksgiving in her honor. She and my kids and grandkids love its taste more than I do.

I don’t care for the pineapples and pineapple juice, which gives it its tang. But my kids and grandkids love it.
